Caviar & Potato Slices

Preheat oven to 500°F. Spread ¼ cup oil in each to 2 jelly-roll pans. Cut cleaned potatoes into ¼" slices. Dip both sides of potato slices in oil in prepared pans, then arrange in pans in a single layer. Bake 10 to 12 minutes or until potatoes are crisp around edges and lightly browned. Arrange on platter and top each with a dollop of sour cream and about ¼ teaspoon caviar. Serve immediately.
