Cut ¼" slice off top of tomato to make lid. Scoop center flesh and seeds into sieve and press through. Discard seeds. Invert tomato shells and drain 10 minutes. Mix apples, olives, celery, and blue cheese. Fill tomatoes. Stir 2 tablespoons sieved tomato into mayonnaise. Top each tomato with a dollop. Replace lids. Garnish.

- 8 green olives, pimento-stuffed -- chopped
