Fried Fillets of Flounder - Stegte Rødspætte Fileter

Stand well-salted fillets in refrigerator 1 hour. Drain, dry and dredge with flour. Dip each in beaten egg, then in zwieback crumbs. Cook fillets in hot butter until browned and coating is crisp. Garnish with lemon slices and parsley. Also known as plaice.
