Kale with Cream Sauce

Serves 6

Add 1 teaspoon salt and enough water to cover kale in large saucepan. Boil over moderately high heat. Reduce to moderate and cook 10 to 15 minutes (until tender). Drain in colander and press to remove all water. Pureé kale. Keep warm. Melt butter over low. Stir in flour, then milk and cream. Over low heat, add remaining salt, pepper and kale. Simmer 3 to 5 minutes.
