Poached Cod Platter

Serves 6

Thaw frozen fish. Place cod in ice water 2 hours before cooking, or 2¾ hour before serving. Drain; sprinkle with salt. Let stand 15 minutes; rinse off salt. In large shallow saucepan, combine vinegar and water. Boil over medium-high heat. Add fish; heat until liquid simmers. Cover pan, set aside. Let stand 20 minutes or until fish is firm but flakes with a fork probe; drain. Arrange on hot platter. Pour butter over. Arrange remaining ingredients.
