Introduction

To get consistent, predictable results in cheesemaking you need to follow the recipe EXACTLY, including the timing and temperature  every step of the way.  Each aspect of the recipe is critical to the final result. 

This is difficult to do in the home kitchen and still lead a normal life and slight variations in  the process will still yield a good cheese, though not always the one you expected! One detail that can not be ignored or shortcut is cleanliness and should be stressed  in every step.
