The Food

Fruit is often plentiful in Ghana and Uganda, especially during a good harvest. Tropical fruits such as mangos, papayas, jackfruit and pineapples are the most accessible and therefore the most popular. Sometimes in Uganda dessert also consists of sweet cakes called mandaz, which are somewhat like fried dough with some sugar added in the mixture.
 
Recipe for Mandaz

 

2 kilos wheat flour
½ kilo sugar,
2 mugs of cold water
about 75 grams of yeast
sunflower oil
Combine the flour, sugar and yeast with the cold water. Blend until the mixture is not too firm, but not too sticky. Roll mixture out onto surface and cut into triangular pieces. Heat the oil and place one triangular piece of dough into the pan at a time. Each piece should rise. Remove from heat when the piece is about to brown.
