Amatriciana sauce

ounces slivers of pancetta
2 T olive oil
1
T crushed chili pepper
2
red onions chopped
2
large T chopped rosemary fresh
2/3
c red wine
28
oz can of tomatoes
2 T fresh oregano
Salt
and pepper
Pasta
Parmesan
cheese
1. Heat oil in pan, drop in pancetta and
chilies. Saute until pancetta becomes crisp.
2. Add onions, rosemary. Continue cooking
until brown and crisp.
3. Add red wine and let it reduce.
4. Add tomatoes, oregano, pepper, bring to a boil then reduce heat and simmer 45
minutes. Add salt before serving.
