CHICKEN & RICE CASSEROLE
- Serves: 4
- 2 cups cooked brown rice
- 2 cups cooked, cubed chicken
- 2 medium zucchini, sliced
- 3/4 cup Monterey Jack cheese, shredded
- 1 (4 oz.) can chopped green chilies, drained
- 2 medium tomatoes, sliced
- ***Topping:***
- 1 cup yogurt cheese or sour cream
- 1/3 cup chopped onion
- 1/2 tsp salt
- 1/4 tsp oregano pepper to taste
- 3/4 cup shredded Monterey Jack cheese
Spread Brown Rice in a greased 2-1/2 Qt. casserole. Top with remaining
ingredients, layering. Mix topping ingredients together except for the
cheese. Mix well and spread over casserole. Sprinkle with cheese. Bake
at 350~ for 30 minutes.
