Did you ever wonder what to do with those flounder fillets you
see in the freezer section?  Try this lo cal dish modified from Cooking
Light.  We assembled this recipe last night and two of us
finished it all... (so much for lo cal).  Wild rice and a cheesy
topped cauliflower completed the meal.

FLOUNDER AU GRATIN - Serves : 4

1 Tbsp margarine
4 green onions, cut into 1/2- inch pieces
2 Tbsp diced celery
2 tsp all-purpose flour
1/8 tsp salt
1/8 tsp white pepper
1/2 cup skim milk
1/4 cup (1 oz) shredded Swiss cheese
1 (16 oz) pkg frozen flounder fillets, thawed and drained
1 Tbsp minced fresh parsley

  Saute' onions & celery with margarine in a small saucepan until
tender.  Stir in flour, salt & pepper.  Cook 1 minute stirring
constantly.  Gradually add milk; stir well. Cook over medium heat
until thickened and bubbly, stirring constantly. Add Swiss
cheese, reduce heat, and cook until cheese melts, stirring
constantly.  Set aside.   Arrange fillets in a single layer in a
10x 6x2 inch baking dish coated with cooking spray.  Pour cheese
mixture over fillets. Cover and bake at 350 for 25 minutes or
until fish flakes easily when tested with a fork. Sprinkle with
parsley. (164 Calories per serving.)
