I like this one.. a make ahead Italian casserole with some
zing to it.

ITALIAN SAUSAGE CASSEROLE - Serves: 6
1 (8 oz) pkg uncooked spaghetti
1 (10 oz) pkg frozen, chopped spinach, thawed & drained
1 (10-3/4 oz) can cream of mushroom soup, undiluted
2 cloves garlic, minced
1/2 tsp dried whole marjoram
1/4 -1/2 tsp dried whole tarragon
1/4 tsp salt
1/4 tsp pepper
1 lb Italian sausage
1 large onion chopped
1 egg, slightly beaten
1 (16 oz) can ricotta cheese
1 tomato, chopped
1/3 cup chopped fresh parsley

  Cook spaghetti & drain. Spoon into a lightly greased
13x9x2 inch baking dish & set aside.
  Combine spinach & next 6 ingredients; spoon over
spaghetti.
  Remove casing from sausage & cook with onion in a large
skillet until meat is browned, stirring to crumble. Drain
and sprinkle over spinach mixture.
  Combine egg and ricotta cheese; spread over sausage
mixture.  Cover and chill 8 hours.
  To bake, remove from refrigerator and let stand for 30
minutes.  Bake uncovered, at 375 for 35 to 40 minutes or
until thoroughly heated.  Sprinkle with tomato and parsley.
