Fresh cilantro is essential in this delicious recipe, do
not use dried or substitute parsley (horrors).

LIME GINGER CHICKEN WITH SALSA
 - Serves 4-5.   

4 chicken breasts, halved, skinned and deboned
l/3 cup fresh lime juice
2 tsp. grated, peeled fresh ginger
3 garlic cloves, chopped
l/2 tsp. dried red pepper flakes
SALSA:
8 oz. ripe plum tomatoes, diced
l medium green bell pepper, diced
1 Jalapenio pepper, diced
l/4 C diced red onion
l Tbsp. chopped FRESH cilantro
l Tbsp. olive oil
l Tbsp. fresh lime juice
l small garlic clove, minced
Salt, pepper and hot sauce to taste
l lime, thinly sliced for garnish

  Cut each chicken breast half lengthwise into three l inch
wide strips.  Set aside.  Mix lime juice, ginger, garlic,
and pepper flakes in a bowl.  Stir in chicken strips. 
Cover and chill at least 2 hours or overnight. 
  To make salsa: Combine first 8 salsa ingredients in a
bowl.  Season to taste.
 Now, heat l tablespoon oil in large, heavy skillet over
high heat.  Add chicken (in batches if necessary) and cook
until brown, about 2 minutes per side. Transfer to plates. 
Add lime slices to skillet and brown on both sides.  Set
one on each plate.  Garnish with fresh cilantro sprigs. 
Serve immediately with salsa.
