This Southern casserole favorite is a staple on the
Christmas Holiday table.  

SCALLOPED OYSTERS: Serves - 6

1 pint oysters
butter
1/4 lb saltines, crushed
3 Tbsp minced shallots
salt and pepper to taste
paprika to taste
1/4 tsp garlic powder
1/2 cup heavy cream
1 Tbsp Worcestershire sauce
4 drops hot sauce
1/4 cup dry white wine

  Drain oysters; reserving 1/2 cup liquor. Butter a
casserole generously. Place 1/4 of the saltines in
casserole.  Cover  with 1/3 of the oysters; sprinkle with
1/3 of the shallots. Sprinkle with the salt, pepper and
paprika; dot with butter.  Repeat layer twice; sprinkle
with remaining saltines.  Dot with butter.
  Combine reserved oyster liquor with the cream,
Worcestershire sauce, hot sauce and wine; pour over top.
  Bake in a preheated 400~ oven for 30 minutes.
