Great, quick appetizer, or entree.  This will keep for weeks in the
refrigerator.

HERBED SCALLOPS  

HERB BUTTER: Blend in processor 
3/4 lb softened butter or margarine 
1 TBSP chopped fresh Chives
2 TBSP chopped
fresh Parsley 
4 cloves finely minced Garlic
1 tsp Salt
1/2 tsp Black Pepper

SCALLOPS:  Put the scallops in a buttered, baking dish, and add
1/3 cup of dry Sherry. Top with some of the Herb Butter, sprinkle
with Breadcrumbs and bake 15 mins at 375 degrees, or until
golden.
