Jamaican Jerk Chicken


Recipe By: Margie Williams (she got the recipe from a friend up the street at Edwards AFB, but Margie's such a good cook that I like to think the recipe was hers)

2/3 cup chopped green onion
3 tbsp fresh thyme (or 1 tbsp dried)
3 tbsp peanut oil
3 tbsp soy sauce
2 tbsp fresh minced ginger
1 habanero pepper, seeded & minced, or 1 tbsp minced serrano pepper
1 bay leaf
1 tspn freshly ground black pepper
1/3 tspn nutmeg
1/2 tspn allspice
4 skinned, boneless chicken breasts

Mix ingredients together. Spoon over chicken. Marinate overnight in a covered dish.

Grill!!
