Chicken, Shrimp, Mudbug, & Sausage Jambalaya


Recipe By: Nugget with some help from a famous chef

2 leaves bay leaves
1 1/2 teaspoons salt
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons dried oregano
1 1/4 teaspoons white pepper
1 teaspoon black pepper
3/4 teaspoon dried thyme
1 1/2 cups onion
1 cup celery
3/4 cup green bell peppers
1 pound chicken
1 1/2 teaspoons minced garlic
30 ounces tomato sauce
12 ounces beer
1/2 cup chopped green onions
2 1/2 cups rice
1/2 pound shrimp
1 package Healthy Choice Low Fat Polska Kielbasa Sausage
1/2 pound crawfish

Directions:

Combine the seasoning mix ingredients in a small bowl and set aside.

In a 4-quart saucepan, pour 1 ˝ tablespoon of olive oil (approx) or melt 1 ˝ tablespoon butter (approx) over medium heat. Saute sausage until crisp, about 5 to 8 minutes, stirring frequently. Add the onions, celery and bell peppers; sauté until tender but still firm, about 5 minutes, stirring occasionally and scraping pan bottom well. Add the chicken. Raise heat to high and cook 1 minute, stirring constantly. Reduce heat to medium. Add the seasoning mix and minced garlic; cook about 3 minutes, stirring constantly and scraping pan bottom as needed. Add tomato sauce and cook until chicken is tender, about 5 to 8 minutes, stirring frequently. Stir in the beer and bring to a boil. Then stir in the green onions and cook about 2 minutes, stirring once or twice. Add the rice and shrimp; stir well and remove from heat.

Transfer to an ungreased 8x8-inch baking pan (the size is printed on the bottom). Cover pan snugly with aluminum foil and bake at 350 degrees until rice is tender but still a bit crunchy, about 20 to 30 minutes (I use 30 minutes, but you should check it at 20 the first time to be sure).

Remove bay leaves and serve immediately.

This is a very hot recipe; if you want to tone it down just reduce the cayenne.

I modified the recipe somewhat; you can add anything to this you want. I have had it with tasso (Cajun type) ham (Cure 81 ham is a good and more inexpensive ham than tasso) and various sausages added and it is quite good. I also skip the celery.

Feel free to experiment with this recipe, it is simple and quite hard to mess up. Enjoy!
