Sauce Meatballs 3 large cans crushed tomatoes in puree 2 lbs ground beef, turkey or chicken 36 oz tomato paste 4-5 kaiser rolls 2 large onions, chopped 3/4 cup parmesan cheese 6 tbsp olive oil 1 tspn oregano 6-8 cloves garlic, crushed 2-3 tspn paprika 8 cups water 1 large onion, chopped 1 1/2 tbsp oregano 4-5 cloves garlic, crushed 1 1/2 tbsp basil 2 eggs, beaten 3 tbsp brown sugar 1/4 tspn black pepper several dashes cayenne 1/2 tspn salt salt & pepper to taste (about 1 tspn each) 1/2 lb sweet sausage
To make sauce:
Saute onions in oil in large stock pot until golden. Add garlic and stir. Add tomatoes, tomato paste and water and stir well. Add spices and sugar and stir well. Add sausage. Let sauce cook on low for 2 hours with the lid half tilted. Add meatballs after two hours. Cook sauce half covered for another 30 minutes and then uncovered for another hour. (Total cooking time = 3 1/2 hours).
To make meatballs:
Take kaiser rolls and run under sink tap to moisten bread. Squeeze out excess water from bread and break into small peices in a large mixing bowl. Add beaten eggs to bread and mix well with a fork. Add ground beef and onions and garlic. Mix together with hands. Finally add spices and parmesan cheese, mixing thoroughly. form meatballs into balls the size of golf balls. Drop meatballs directly into sauce.
