8 cups red kidney beans or 4 cans w/no juice
1 each yellow onion
2 Healthy Choice Low Fat Polska Kielbasa Sausages
2 teaspoons garlic powder
2 teaspoons black pepper
2 teaspoons white pepper
2 teaspoons cayenne pepper
1 teaspoon salt
2 whole bay leaves
1 teaspoon tarragon
1 teaspoon thyme
1 teaspoon oregano
2 tablespoons tabasco sauce
2 tablespoons olive oil
2 cups water
4 cups rice
2 cans chicken broth
Dice the onions and slice the sausage into 1/4" slices. Heat oil over medium high heat. Add onions and sausage, sprinkle seasoning over mixture and saute for about 5 minutes or until done. Sprinkle flour over mixture until all the excess moisture is absorbed and the mixture is somewhat doughy. Add some chicken broth and more flour until doughy, use this procedure with 1/2 can of chicken broth. Put beans, water, bay leaves and sausage mixture into crockpot and cook until done. Minute rice can be added at the very end. It will cook itself in the water even after the crockpot is turned off, and it will soak up the excess water if 8 cups of water are used.
The rice can by thrown in to soak up the water, or reduce the water and just serve the red beans over rice if you want.
I didn't add the rice because I only used 2 cans of chicken broth and 2 cups of water. If rice is added to the crockpot, use 6 cups of water and 2 cans of chicken broth. This recipe was REALLY good.
