Here is a partial transcript of Scott's "interview" with Natasha Pavlovich for Orlando Leap last weekend. The transcript was done by Lisa of TrekToday.com and the cutting of stuff we pretty much already know was done by me. I added some additional stuff I remember at the bottom.
Some of Scott's comments regarding Enterprise
"It's only a hundred and fifty years from now in 2151 - that's just around the corner"
"It's a really great part. I was really excited when I got the script because it's the first Starship and I'm the first Captain and it's right from the beginning. Even if you don't know Star Trek and you haven't followed the other series this is basically the first one, so you don't need to come to it with lots of lore in terms of what Star Trek is or was."
"It's basically these people are getting on a ship and going out to explore for the first time. It's very much like 'The Right Stuff' or any of those kind of movies, where it's much more humanly based in terms of emotion and seeing this Universe for this first time. Which I think is really exciting."
Scott laughed when asked just what his role as Captain of the Enterprise will involve. "It means that I sit in the middle of the Bridge and I give all the orders, and everybody follows me."
Scott on What Girls Learn
In regard to his upcoming Showtime TV movie, What Girls Learn, Scott said: "It's a really beautiful story I know everyone's going to love," Bakula commented. "We're hoping to get an October airdate. Its geared to a younger audiences and is really exciting."
Scott on fanmail and the internet
Scott mentioned that he does read some of his fan mail, but he doesn't get on the internet often. "[I use the internet] very seldom," he said. "If I go on it's for research."
Scott also mentioned that he was getting a new fan mail address, but he didn't know if it was ready yet. He said his fans would know. We do. Follow this link to find the new fanmail address.
Nude scenes
For those of you who have listened to the interview, and noted that Scott
can't quite recall what he had previously said about doing nude scenes--we save
everything:

Playgirl: Would you ever do nudity in film?
SB: I might. The situation hasn't arrived yet where I've ever had to seriously consider it. I've done a couple of love scenes that appear to be nude scenes in movies. I don't have a problem with it. It has to be the right situation.
Other stuff
And for those of you who are interested, he said his daughter Chelsy is still planning a career in show business. She does have a beautiful voice. As someone who was lucky enough to hear it, I'd be happy to be the first to join her fan club. ;-)
