Chili Egg Puff

Makes approximately 12 servings

 

 10 eggs 1 pint small-curd cottage cheese
 1/2 cup flour 1/2 pound grated Jack Cheese
1 teaspoon salt 1/2 cup melted butter or margarine
1 teaspoon baking powder 1 seven-ounce can diced green chilies
 
Beat egg whites, then add yolks. Beat until fluffy and lemon colored. Into this egg mixture, stir 1/2 cup flour, 1 teaspoon salt, and 1 teaspoon baking powder.
 
Next, in a separate bowl, mix together: 1 pint cottage cheese, 1/2 pound Jack Cheese, 1/2 cup butter or margarine, and 1 can diced chilies. Fold into egg mixture. Pour into well-oiled 9 inch X 13 inch baking pan. Bake 45 minutes at 350 degrees or until top is browned and center appears firm. Serve hot.
